Specifically, the color green. The presence of chlorophyll in a potato means that a glycoalkaloid poison named solanine is also present. A defense against insects, this nerve toxin (which is in the nightshade family) can result in headaches, vomiting, diarrhea, and even paralysis if ingested in very high amounts.

Can you get sick from eating old potatoes?

Bad potatoes contain high levels of solanine and can cause solanine poisoning. Symptoms include nausea, diarrhea, stomach cramps, vomiting, headache, dizziness, among other things. Mild solanine poisoning should only last around 24 hours- but definitely seek medical help if you need it!
