The rising of bread dough occurs rapidly, and the dough continues to expand in the warm and wet environment of the stomach. This ongoing expansion of material can cause bloat, foreign body obstruction, stomach torsion, hypovolemic shock, and in very severe cases stomach rupture.
Can raw dough be digested?
The short answer is no. Eating raw dough made with flour or eggs can make you sick.
Can raw dough hurt your stomach?
You can get sick if you eat unbaked dough or batter made with flour containing germs. Germs are killed only when food made with flour is baked or cooked. CDC investigated outbreaks of E. coli infections linked to raw flour or cake mix in 2016, 2019, and 2021.
Is it OK to eat slightly undercooked bread?
You may be ready to throw in the towel and try eating your bread anyway—but please don't. Breads made with flour and/or eggs can contain dangerous bacteria. It's best to play it safe and not eat the undercooked bread.
Does dough digest?
Raw starch (dough) might start some of its acidolysis in the stomach, but the major digestion of starch would have to take place in the large intestine. Even there, not all of the raw starch is digested. It mostly generates gas, and passes through as undigested fiber in feces.
