Can you dehydrate raw sweet potatoes? You can, but the color will be bland, not bright orange, and they won't be as digestible as cooked sweet potatoes. Raw sweet potatoes can be dried and ground into powder to use in breads or other baked goods.

Do potatoes need to be cooked before dehydrating?

Blanch potatoes before dehydrating – super important!! Blanch until fork tender, 4-6 minutes depending on thickness. Do NOT skip this step. Seriously, the results are not pretty. Potatoes that are not blanched will turn a very unappealing grey to black colour as they dehydrate.

Do sweet potatoes need to be blanched before dehydrating?

Blanching or cooking protects against loss of color, texture and flavor. It also decreases the time it takes to dehydrate sweet potatoes and the time it takes to re-hydrate them. Without cooking or blanching, dehydrated sweet potatoes will lose their color and change flavor after about 3 months.

Can you dehydrate raw potatoes?

Potatoes can be dehydrated from uncooked potatoes, blanched, partially-cooked, or fully cooked potatoes. From my own experience and experimenting, I've found that half-cooked potatoes rehydrate the best.

How do you preserve raw sweet potatoes?

Choose sweet potatoes with a bright, uniform color, and be sure there is no sign of decay. Raw sweet potatoes should not be refrigerated. Store in a cool, dry, dark place, unwrapped, for up to two months or at room temperature for up to a week.
