Making dried bananas is a great way to salvage overripe fruit. These days, we harvest 40-50 pounds of bananas at a time. There's no way we can eat that many fresh bananas before they go bad, so dehydrating bananas makes sense.

Do I need to pretreat bananas before dehydrating?

Pre-Treating Banana For Dehydrating If you have ever left banana exposed to the air for a while it will go dark and brown quite quickly. This won't affect the flavour at all but is less appealing. To prevent this discolouration we can pretreat the banana which will lessen but not completely eliminate the discolouring.

What is the shelf life of dehydrated bananas?

Properly stored, dried bananas will maintain best quality for about 12 to 18 months, but will remain safe beyond that time.
