What can I do with freshly dug potatoes?
Clean the potatoes after you dig them up and place in a cardboard box or open paper bags in a room that is 65 F. (18 C.) and humidity up to 95 percent. After the spuds have cured, check them for damage.
Can you cook fresh dug potatoes?
One of my favorite things is just to steam them until tender, then toss them into softened butter you've whipped with fresh herbs and shallots. Stir just until the potatoes are evenly coated, sprinkle with coarse salt and serve.
