A: Once cooked (whole or cut) potatoes can be stored in water (with or without vinegar) without becoming discolored or mushy. But, water storage isn't necessary. Refrigerate the boiled potatoes in a sealed container and use within a couple of days.


How long can cooked potatoes stay in water?

We usually recommend no more than 24 hours. You can keep the potatoes from absorbing the water by making sure the water is not salted, and is chilled (you can even add ice to the water).

Can you keep boiled potatoes in water?

Should one leave boiled potatoes in their hot water to keep them warm? Of course, you can, but if your question is “should you,” well, not necessarily. In fact, the longer you keep potatoes warm, the softer and creamier they will become. That means they could be watery after some time.

NO! This is the wrong way to do it and is not food safe. Cooked starch foods like potatoes can grow germs if not kept either refrigerated and cold or hot over 140º F. Bake or boil the potatoes for potato salad, then cool.

How long can potatoes sit in water in fridge?

You can store peeled potatoes in water in the refrigerator for about 24 hours. Peeled potatoes left out by themselves at room temperature, on a refrigerator shelf or wrapped in foil or plastic wrap will still get dark overnight, so submerge them in a bowl of water, cover and refrigerate.
