It was observed by us that the dried sweet potato was highly contaminated with the mold and contained 0.01 to 0.18 ppm of aflatoxin. The dried sweet potato is washed with water before cooking but the mold and aflatoxin cannot be washed out completely.

Illness and death have resulted when individuals consumed green potatoes and potato shoots. However, solanine is an excellent pesticide. It provides protection from common potato pests. Another example of a natural toxicant is a poison called aflatoxin.

What foods contain high aflatoxin?

Aflatoxins can occur in foods such as groundnuts, tree nuts, maize, rice, figs and other dried foods, spices, crude vegetable oils and cocoa beans, as a result of fungal contamination before and after harvest.

Does cooking remove aflatoxin?

Aflatoxin is stable and heat resistant. It is NOT possible to inactivate aflatoxin by heating your product. It is difficult to eliminate aflatoxin once it is produced. When you have aflatoxin in your product and it is above the maximum level than the only option is to destroy the product.

Does boiling remove aflatoxin?

Boiling was able to induce a 52% reduction of aflatoxin content of peanut flour, in the same range as Stoloff et al., (1981) who obtained 53% aflatoxin reduction through boiling maize flour.
