How long do potatoes last after harvest?

Potato Storing After Harvest The tubers can last for six to eight months when stored in cool temperatures. When storing garden potatoes in temperatures above 40 F. (4 C.), they will only last three or four months. The spuds will also shrivel and may sprout.

How long can potatoes stay in the ground?

Once the plant dies, the potatoes are finished growing in size. However, the skin on the potato does harden and cure to make it stronger for storage. We recommend leaving the potatoes in the ground for about 2 weeks after the plants have died off.
