Can I dehydrate raw potatoes?
Potatoes can be dehydrated from uncooked potatoes, blanched, partially-cooked, or fully cooked potatoes. From my own experience and experimenting, I've found that half-cooked potatoes rehydrate the best.
How long do dehydrated sliced potatoes last?
I used about 16 red potatoes for this demo but you can use any type or quantity you prefer. Store your dehydrated potato slices in a cool, dark, dry place, inside an airtight container. Properly stored, these potato slices can keep for years. Use slices exactly as you would from any store-bought box of dry potatoes.
How long dehydrate diced potatoes?
My semi-cooked diced potatoes took about 10 hours to dry. But drying time is dependent on how dense (ie: how cooked) the potato is as well as the uniformity and size of the pieces. It's also dependent upon how often you rotate the trays, how evenly you've spread them out and even the humidity in your area.
