While slicing my potatoes, I noticed a brownish ring in the flesh all around the outside of the potatoes. This condition, called vascular discoloration, is similar to net necrosis. Dry growing conditions cause the vascular ring, which extends around the entire tuber. This condition is not harmful.
Can you eat potatoes with a ring inside?
The potatoes are still safe to eat, just cut the spots away. If there is an extensive amount of Fusarium, this can give the potatoes an off flavor.
What does a brown ring inside a potato mean?
Vascular discoloration refers to a darkening of the ring of tissue that runs around the tuber just below (about a quarter of an inch) the skin. This ring contains the vascular system, phloem an xylem, of the tuber. This appears dark in the raw tuber and darker upon frying (picture of potato chip with discoloration).
What does a potato look like when you shouldn't eat it?
If the potato is firm, it has most of the nutrients intact and can be eaten after removing the sprouted part. However, if the potato is shrunken and wrinkled, it should not be eaten.
Why does my potato have holes inside?

Methods of control include crop rotation, traps, pesticides, and predatory nematodes. Holes in potatoes can also be caused by hollow heart conditions and white grubs.
