If you have a potato allergy, you may experience an allergic reaction immediately upon touching or tasting potato. This reaction can also occur up to several hours later. While cutting or peeling potatoes, you may experience a rash on your hands.


Why does peeling potatoes make my hands itchy?

Several substances in potatoes may trigger the allergic reaction, including a glycoprotein called patatin and alkaloids such as solanine. Potato allergies may have cross-sensitivities with other allergies, including other plant allergies, food allergies, and latex allergies.

Why do my hands itch after cooking?

Repeated episodes of contact urticaria may lead to dermatitis, known as protein contact dermatitis. In food handlers this type of allergy is caused by particular proteins, such as those found in seafood, meat, poultry, wheat or rye flour and some fruit and vegetables.

Can potatoes trigger eczema?
