Why sweet potato is so sweet?
As soon as sweet potatoes start to heat up during cooking, a special enzyme particular to sweet potatoes goes to work. This enzyme breaks down the tasteless, chalky starch into maltose – in other words, the starch becomes sugar. Maltose is only about a third as sweet as table sugar, but that's plenty sweet for us!
Do sweet potatoes have a lot of sugar?
The sugar content in sweet potatoes is 4.2 grams for every 3.5 ounces of sweet potatoes that you ingest. While not terribly high or alarming, this confirms the presence of sugar just the same in sweet potatoes. As with all things, excess is bad, and this applies also to your sugar intake.
