Campylobacter spp. are fastidious microorganisms but must somehow survive outside the host, especially in food and agricultural environments and also resist the innate and humoral immune responses inside the host.

Campylobacter will not grow in food stored at room or fridge temperatures, but will survive. Campylobacter does not survive well on environmental surfaces, particularly dry surfaces.

Can Campylobacter survive in environmental oxygen level?

According to Kaakoush et al. [7], Campylobacter requires low oxygen concentration, between 2–10 %, for optimal growth. Moreover, Campylobacter seems to be sensitive to high oxygen tensions therefore, theoretically, it cannot grow under an ambient atmosphere, during food processing for instance.

How is Campylobacter isolated?

The membrane filter method has been successfully used for isolation of Campylobacter from foods as well. In one study, 0.45 μm size membrane filters were used to prevent accidental passing of competitive flora (Baggerman and Koster, 1992).
