Can you eat a potato that is purple inside?

What does purple inside a potato mean?

The phenols and the enzymes meet the oxygen coming in from the outside world, causing a chemical reaction to take place. This chemical reaction results in - you guessed it - pink potatoes. This discoloration isn't harmful to us and you can still eat those potatoes.

Why is my potato purple under the skin?

The purple tones are probably just bruises from the harvesting or when they where being packaged, etc. Before cooking your Russet potatoes just cut the spots off. But remember that if there is a green color around the potatoes then they shouldn't be cooked at all.
