Dried potatoes are uncooked potatoes with most of the water removed. They are a great source of vitamin C, which we need to stay healthy. A serving size of cooked potatoes is ½ cup.


Can you eat raw dehydrated potatoes?

It doesn't make the potato unsafe to eat, but it makes it very unappealing. The best thing to do is when the drying is all done, just take a pair of kitchen scissors and trim those black spots away. In every large batch of potatoes you process, you're likely to get a few with brown spots in them.

Are dried potatoes cooked?

Once the dehydrated potatoes are rehydrated they can be cooked exactly like fresh potatoes.

Do potatoes need to be cooked before dehydrating?

Blanch potatoes before dehydrating – super important!! Blanch until fork tender, 4-6 minutes depending on thickness. Do NOT skip this step. Seriously, the results are not pretty. Potatoes that are not blanched will turn a very unappealing grey to black colour as they dehydrate.

How are dehydrated potatoes made?

Potato flakes are flat chunks of dehydrated mashed potato. How are they made? Potatoes are cooked and mashed, then crushed by rollers on the surface of a drum. The mashed potato is fast-dried until its humidity reaches the desired level, then the layer of dried, mashed potato is scraped from the drum.
