The two species have very different development patterns and root growth. Potatoes have a widely branched adventitious root system developed from underground stems (stolons) and carrots have fibrous roots extending directly from a taproot emerging from the seed.
Is a carrot a stem?
Carrots are, in fact, roots. They're called roots because, like other subterranean vegetables, they obtain the majority of their nutrition from the soil.
Is potato a stem?
Potatoes are stem tubers – enlarged stolons thicken to develop into storage organs. The tuber has all the parts of a normal stem, including nodes and internodes.
